Hakuna Matata’s Ricotta Pancakes


1 cup ricotta cheese

1 cup all purpose flour

1/2 teaspoon baking powder

1 1/2 tablespoon granulated sugar

1/4 teaspoon fine salt

3/4 cup milk

2 large eggs separated

1/2 teaspoon vanilla extract

Butter for cooking

Mix flour, baking powder and sugar together in a bowl.

In a separate bowl, mix ricotta, milk, vanilla and egg yolk.

Beat egg white to a stiff peak.

Mix dry ingredients into ricotta mix. Fold in egg white.

Spoon into a fry pan on low flame. Flip when golden.

Garnish with berry compote, maple syrup and whipped cream.
